After dozens and dozens of attempts we have found the perfect balance of flavors, so as to provide you with the PERFECT "Guanciale".

Ours pork's cheecks are rigorously worked by hand, by artisans with an ultra-centennial tradition. They are left to mature for 90 days in contact with the cleanest mountain air which gives it a distinctive, rustic flavor on the palate with a perfect balance between muscle and fat.
